½ cup baby spinach
2 tsp. olive oil
1 egg plus 2 egg whites, beaten
1 slice 2 percent Cheddar
2 slices whole-grain bread, toasted
In a skillet over medium heat, sauté spinach in olive oil for 3 minutes until wilted. Pour eggs and egg whites evenly on top of spinach and cook without stirring until eggs are firm about 4 minutes. Top with cheese, season with pepper and fold. Serve with toast.

Chia seeds aren’t just a pet, they’re a party in your mouth. Oh, what a party they are. I’m a huge fan of them because they’re chock-full of heart-healthy omega-3s, fiber, protein, and calcium. Since Chia seeds are quickly absorbed by the body, they are very nourishing and satiating. I add them to my breakfast smoothie or pair them with Greek yogurt or cottage cheese along with some blueberries.

12 small strawberries (sliced)
Dash of artificial sweetener, cinnamon, and nutmeg
2 tbsp. skim milk
2 slices diet bread
Beat egg, milk, spices, and artificial sweetener. Dip sliced diet bread. Fry in a non-stick pan lightly coated with cooking spray. Top with strawberries. (absolutely heavenly)
